Bacon is an excellent source if protein. So why not include it in a moderately healthy breakfast.
Simple and quick to make. This is some steel cut Irish oats, topped with some bacon crumbles from my latest batch of bacon. This is accessorized with some home made baby food apple sauce and brown sugar. Top it off with some milk and you hit all of the food groups.
And it’s delicious.
- 1 c. Irish Rolled Oats
- 4 c. Water
- Heavy Pinch of Salt
Boil Water. Add salt and Oatmeal. Bring to a simmer and cook until slightly chewy. About 30 minutes.
Baby Food Apple Sauce
- 2 Apples
Peel and cube apples. Place them in a medium to large sauce pan and just cover with water. Bring to a low boil and cook until the apples are soft, about 10 minutes. Run the cooked apples through a food mill and discard a good bit of the juice (or i suppose have a small glass of it).
Bringing it All Together
Cut 1-2 slices of bacon into small chunks and cook until crispy in a small pan. Once cooked through remove to a paper towel plate or bowl to drain. Discard most, but not all, of the grease and add a few tablespoons of apple with a sprinkle of cinnamon and sugar. Saute until a light crust of golden-brown-and-delicious forms. On a bowl full of hot oatmeal, add apples, bacon, a spoon or two brown sugar, and if you like a splash of milk. Enjoy. Serves 2-3.
